Removing SweetFX is easy as pie - just delete the related files and SweetFX folder from the Skyrim one. Unless of course - the rest of your setup is not actually stable. Unless you're barely scraping vanilla Skyrim's minimal requirements it should result in no more than 5-10fps lost.
